Nestled at the foothills of southeastern Spain’s mountainous coast lies the valley of Vega Baja del Segura, the home of Caprichos del Paladar. Our family has cultivated, harvested and preserved vegetables using traditional methods for more than 25 years. Our artichokes are carefully selected and packaged by hand allowing us to capture the wholesome flavors of Mediterranean gastronomy.

One of the distinguishing characteristics of our artichokes is the variety we cultivate, called the Alcachofa Blanca de Tudela, or 'Tudela White Artichoke’. The Tudela White is highly valued because it is rounder, smoother and sweeter than other species and contains minimal ‘choke’, the fine fibers found just above the artichoke’s heart. We use cuttings from the same healthy plants we have been cultivating for more than 30 years while many other producers often use low quality, genetically modified hybrid seeds designed for mass production.

PLANTING

We cultivate our vegetables using traditional methods, without the use of chemical fertilizers. Our dedicated farmers have more than 30 years of experience in agriculture and monitor plantations daily. We allow our artichokes to grow according nature’s rhythm in a large valley surrounded by mountains over looking the Mediterranean Sea. The combination of our location, long days with full sun and little rainfall allows our artichokes to become sweeter, containing about 30% more natural sugar than others.

CULTIVATION

We cultivate our vegetables using traditional methods, without the use of chemical fertilizers. Our dedicated farmers have more than 30 years of experience in agriculture and monitor plantations daily. We allow our artichokes to grow according nature’s rhythm in a large valley surrounded by mountains over looking the Mediterranean Sea.
